As I sit here writing to the beat of Gwen Stefani's B-A-N-A-N-A-S, I am also allowing myself another piece of this delicious and best banana bread I have ever made. I was inspired by a recipe I saw on the Food Network after googling vegan banana bread recipes. In the hopes that this recipe will change your life (and hopefully mine once you tell all your friends and family), I have included an image and the recipe to this decadent and truly one of a kind Vegan Banana Bread.
Warning: Image will not do it justice as this vegan banana bread is not only delicious, but sexy as any photoshopped and professionally pictured image. Also, I added some definition to the photo. The color of the banana bread does look like this.
Ingredients: 1/4 cup of Oat Flour (blended oats) 1/2 cup of Coconut Flour 1/2 cup of All Purpose Flour (or flour of choice) 1 teaspoon of Baking Soda 1/2 teaspoon of Salt 3 medium ripe Bananas (mashed) 5 tablespoons of Coconut Sugar 5 tablespoons of Brown Sugar 2 tablespoons of Unsweetened Cacao Powder 1/2 cup of Applesauce (unsweetened) 3/8 cup of Coconut Oil 2 tablespoons of Olive Oil 1 teaspoon of Pure Vanilla Extract
Now that you have the ingredients, you can preheat your oven to 350°F.
Now to the Mixing: Mix bananas, sugar, applesauce, oils, and vanilla in a one bowl.
Mix flours, baking soda, salt in another bowl.
Then, combine the wet ingredients with the dry ingredients. Use a spatula to avoid over mixing. We want to make sure there are still a few lumps in the batter. At this time you can add cacao nibs, crushed nuts, raisins, you name it!
Now, transfer the batter into a lightly sprayed loaf pan. Bake for 45 to 50 minutes at 350 °F.
