What a year it's been! I've contemplated on whether or not that first sentence deserved an exclamation point, but I feel the intention is way better with it.  

While 2020 has surprised us with uncertainty, Disney Holiday Gifts are here to bring us some comfort and consistency. The new gifts have arrived and Disney has the guide for you. Staying in this holiday season is probably best given the current pandemic, so if you have the means to spear some dollars these gifts are sweet. If you have the means to spear a little extra, please consider donating to organizations like Toys for Tots  that are bringing gifts to those who have lost. Another great way to gift a gift or help a family or child in need is to visit or check with your local churches.

Indian Caribbean Rice Recipe (Receta: Arroz Indio Caribeño)

​The boo and I love Indian food. Just around the corner there’s this really great Indian market where we indulge frequently in their savory food selection. In the spirit of love for their food, I have altered my rice quite a bit when I’m going for a different rice flavor. It’s simple and easy, and it’s the closest I’ve gotten to replicating their rice. 

So, without further ado, here’s my quick and simple recipe for my Indian Caribbean Rice.
Ingredients
  • 1 cup long grain rice 
  • 2 cups water
  • Salt and pepper to taste (about 1/4 tsp pepper, 1/2 tsp salt)
  • 1 tsp packed basil leaves
  • 1/4 tsp powdered ginger 
  • 1-2 bay leaf
  • 4 cloves (our key spice ingredient)

Procedure
  • Add all ingredients to a pot/saucepan and combine 
  • When water begins to boil, cover and cook over over low heat for 20 minutes
  • When ready, use a fork to fluff up the rice 
*This specific recipe is about 3-4 servings. ​
​How do we measure? For every cup of rice, add two cups of water. Let’s say you only want to cook for one. Then use only 1/2 cup of rice and one cup of water. 
This is really my go to rice these days. Sometimes I’ll add some tomatoes and paprika for coloring. Remember, cooking is about personal taste and, of course garnishing. So, take a chance at adding some favorite spices and adding some colors into your meal. By exploring we find what we like. Take a chance and have some fun with it.

*Optional: Something I like to do, that my mom taught me, is to cut up some fresh onions and add when rice is fully cooked for some extra flavor. 
Also, at this point, you can also add some olive oil. 

Extra tips if something goes wrong: If for some reason you over cook your rice or it's hard, add some olive oil in the middle and cook over very low heat for a few extra minutes. If you feel it needs more water, you can salvage your rice with a splash of water and olive oil.

Mi pareja y yo somos amantes a la comida india. A la vuelta de la esquina de nuestro apartamento hay un mercado indio donde nos damos el gustito frecuente. Me gusta tanto que he alterado un poco mi arroz en busca de un sabor similar al arroz estilo indo. Es simple y fácil y es mi toque personal al arroz indio.

Sin más preámbulos, aquí está mi receta rápida y simple para mi Arroz Indio Caribeño.
Ingredientes 
  • 1 taza de arroz grano largo 
  • 2 tazas de agua
  • Sal y pimiento a gusto (aproximadamente 1/4 cdita de pimienta, 1/2 cdita de sal)
  • 1 cdita (llena) de hojas de albahaca 
  • 1/4 cdita de jengibre en polvo
  • 1-2 hojas de laurel
  • 4 clavos (este es nuestro ingrediente especial)
​Procedimiento
  • Agregue todos los ingredientes a una olla/cacerola y combine
  • Cuando el agua comience a hervir, cubra y cocine a fuego lento por 20 minutos
  • Cuando esté listo, use un tenedor para esponjar el arroz

*Esta receta da como 3 a 4 porciones. 
¿Cómo medimos? Por cada taza de arroz, agregue dos tazas de agua. Supongamos que solo quiere cocinar para uno. Si es así, use solo 1/2 taza de arroz y una taza de agua. ​
* Opcional: Algo que me gusta hacer, que me enseñó mi mamá es cortar algunas cebollas frescas y agregarlas cuando el arroz esté completamente cocido para darle un sabor extra.
Además, en este punto, también puedes agregar un poco de aceite de oliva.

Consejos adicionales si algo sale mal: Si por alguna razón cocinas demasiado el arroz o está duro, agrega un poco de aceite de oliva en el medio y cocina a fuego muy lento unos minutos más. Si cree que necesita más agua, puedes salvar el arroz agregando un poquito de agua y aceite de oliva.
Este es mi arroz preferido por el momento. A veces agrego tomates y pimientos para darle color y un sabor diferente. Recuerde, cocinar tiene que ver con el gusto personal y por supuesto, con los colores que le damos a la comida. Por lo tanto, aproveche la oportunidad de agregar algunas especias favoritas y agregar algunos colores a su comida. Explorando llegamos a conocer nuestros gustos en la cocina y así se nos va el miedo.

Quick Berry Bowl for the Lazy in All of Us

Fall may be approaching, but some of us are still feeling what appears to be extended summer heat. Smoothie bowls are my go to after a work out, and even as a dessert. They are just so easy and satisfying. 
​Most recently I started to incorporate protein powder into my smoothies, specifically Sunwarrior Vegan Collagen. The fires in California have caused the air to be a lot less breathable and polluted. After doing some research I learned the loss of collagen is also caused by our unhealthy air quality. Plus, it has biotin and other nutrients, and it's plant based. So far so good. I bought the chocolate fudge because it was the cheapest. I’m always in for a bargain - as long as I need what’s on sale. If you tried my Go-To Smoothie Bowl, you’ll appreciate this one even better. It’s simple, quick, and delicious!

​I’ve been prepping this smoothie into glass bowls and let me tell you ... game changer! Let me give you a visual. 

I finish my workout, remove the pre-prepped smoothie bowl from the freezer. I let it sit while I run and take a shower and get ready. By the time I meet this smoothie bowl again it’s ready for some serious spooning.
So, without further ado, here’s the recipe to my Quick Berry Bowl. A smoothie created for even the lazy days we all share. 
Ingredients
  • 2 frozen bananas
  • 1 cup frozen berries
  • 1 tbsp nut butter
  • 1 scoop protein powder
  • splash of plant milk




Procedure
  • Blend together (mixing in between if you don't have a Vitamix like me because we ain't got that kinda money. Plus, this blender works great and it was only $50 at Target)
  • ​Add some nuts, granola, nut butter, seeds, fruit for garnishing and extra nutrients
  •  Enjoy!​

Give Fall its Proper Welcome with these Oat Cinnamon Cookies

Grab your cup of plant milk and crawl into your favorite blanket with our Oat Cinnamon Cookies. These cookies are perfect for the fall.

As if an excuse was needed!

Without further ado, here's the recipe to our new Oat Cinnamon Cookies!

​Ingredients
Dry:

1 cup rolled oats
3 tbsp oat flour (I blended about ¼ cup then scopped it up from here)
2 tbsp ground flaxseed
1 ½ tsp ground cinnimaon

Wet: 
2 ½ tbsp melted coconut oil
¼ cup almond butter (creamy, salted)
3 tbsp honey (sub agave for fully vegan)
3 tbsp coconut sugar
1 tsp vanilla extract
2 tbsp coconut milk

​Procedure
Mix dry ingredients, then add wet ingredients into these one by one and mix thoroughly

Add ½ cup vegan chocolate chip

On a tray lined with parchment paper, add scoops of dough, a few inches apart
​
Bake at 350 F for about 15 minutes

Let cool at room emperature for 10 minutes
 Enjoy!
